Ingredients
For the cupcakes
‑ Flour 250 gms
Cocoa powder 2 x 15ml tbsps
Baking powder 2 tsps
Butter 100 gms
Caster Sugar 200 gms
Red colour 1 x 15ml tbsps
Vanilla extract 2 tsps
Eggs 2
Butter milk 175 ml
Vinegar 1/2 tsp
Muffin tins 2 x 12
Cream cheese icing
Icing sugar 500 gms
Cream cheese 125 gms
Butter 125 gms
Red sugar (optional to decorate)
method
Start by pre heating the oven and line the tray with paper cases
‑Now combine the flour, cocoa, and baking powder in a bowl
‑In another bowl, mix in the cream, butter, sugar, food colour and vanilla
‑Add in the dry ingredients and egg during the mixing
‑Now beat the butter milk and vinegar and divide the mixture between 24 cases
‑Bake in the oven for 20 minutes.
‑Leave them to cool.
For the icing:
‑Make a smooth paste with icing sugar, cream cheese and butter.
‑Cover each cupcake with the icing, using a teaspoon or spatula.
‑Decorate with red sugar and yummy cupcakes are ready to be served. |
